Pesto is a typical sauce originating in the Liguria region in Norther Italy, whose capital is the city of Genoa, hence its name.
Its base ingredient is Basil (Ocimum Basilicum), a culinary herb originating in tropical Asia. Basil is one of the most frequently used herbs in Italian cuisine.
The earliest recipe for Pesto dates back as far as the early 1800’s, although there is evidence of very similar recipes that date back even further, such as ‘L’agliata’, very prevalent in Liguria during the Renaissance.
According to tradition, the finest quality Pesto is made using only the very best Basil leaves from the Liguria region. Besides the Basil, other essential ingredients for Pesto are Parmesan cheese and pine nuts.
We recommend using this Pesto sauce with any of your favourite pastas. Add to the pasta while it is still hot, drizzle with Extra Virgin Olive Oil and, if desired, add a few fresh rocket leaves.
