Whole Anchovy-Flavoured ‘Pelotin’ Olives by José Lou

These ‘Pelotin’ Olives in fact belong to the Queen olive variety (Gordal), but are of a much smaller calibre.

They are very fleshy, with an intense green colour and fine texture, and have a very pleasant taste similar to that of the Manzanilla variety.

They come from the area around Seville (Andalusia) in the south of Spain, where they are collected by hand.

Perfect as a snack on their own, or as part of a green salad.
